Premium Stainless Steel: Look for 18/10 (304-grade) stainless steel as the standard for high quality. This indicates 18% chromium (for shine and corrosion resistance) and 10% nickel (for luster, durability, and rust resistance). Avoid 18/0 or 13/0 for premium lines.
Material Thickness: The cutlery should have a solid, substantial feel (good "heft in hand"). This comes from thicker gauge steel, especially at the handle and the bolster (the point where the handle meets the working end).
Consistency: The material should be consistent, with no seams or hollow spots in forged pieces.
Forged vs. Stamped: Fully forged cutlery is a hallmark of quality. It's heated and hammered into shape, making it denser, more durable, and better balanced than stamped (cut from a flat sheet) cutlery.
Finish & Polish: A flawless, mirror-polished finish with no scratches, pits, or buffing marks. Edges should be smooth, not sharp. Satin and brushed finishes should be even and consistent.
Balance: The cutlery should balance comfortably in the hand, with the weight distributed appropriately. The handle shouldn't feel disproportionately heavy or light.
Joint/Boil: The transition between the handle and the working end (the bolster) should be seamless, smooth, and robust. This is a critical stress point.
Comfortable Handle: Rounded, ergonomic handles that are comfortable to grip. Edges should be softened.
