The common materials for stainless steel knives and forks available in the market mainly include 410 (13/0), 304 (18/8 or 18/10), etc.

410 stainless steel is commonly referred to as 13/0 stainless steel, indicating that it contains approximately 13% chromium and has no significant amount of nickel. Due to the absence of nickel addition, the cost of raw materials is relatively low, resulting in a significant price advantage.
410 stainless steel has good hardness and strength, and it is also magnetic. Therefore, some knife products use this material. For example, steak knives, kitchen knives and other products that require high hardness and sharpness usually consider using 410 or similar martensitic stainless steel materials.
However, for ordinary dining utensils such as knives, forks and spoons, the corrosion resistance of 410 is relatively limited. In salt spray tests, long-term humid environments and high salt content conditions, the products are more prone to oxidation or rust spots. For instance, after a long period of salt water testing, low-nickel or nickel-free materials may exhibit obvious corrosion.
The 410 stainless steel flatware is more suitable for markets where price sensitivity is high and the requirements for usage environment are relatively simple.

304 stainless steel belongs to austenitic stainless steel and is a highly advanced material that is widely used in food-contact products at present.
304 stainless steel typically contains about 18% chromium and 8% - 10.5% nickel, and therefore is also known as 18/8 or 18/10 stainless steel.
The chromium element can form a dense and stable chromium oxide passivation film on the surface of steel. This protective film can effectively prevent air and moisture from reaching the steel, thereby reducing the risk of oxidation.
Meanwhile, the nickel element can further enhance the stability of the passivation film, improving the product's resistance to chloride ions, acidic and alkaline environments, as well as long-term damp conditions.

Compared with other low-nickel materials, 304 stainless steel has better corrosion resistance and a longer service life.
Furthermore, 304 stainless steel is usually non-magnetic (it may have a slight magnetic property after processing). The material cannot be directly determined by visual inspection of the surface, but it can be preliminarily judged through professional component testing or magnetic testing.
Due to the superior food safety performance and quality characteristics of 304 stainless steel, it is more widely recognized by the markets in Europe and America, as well as by high-end restaurants and hotels.
